One of the most delicious spring time wild foods is Stinging Nettles! Packed full of iron and vitamins, stinging nettles is the perfect food when transitioning from winter to spring. High in vitamin K, C and D, iron, calcium, magnesium, minerals and amino acids, stinging nettles are a perfect way to face spring allergies, toning all the circulatory systems, energizing the immune system, stabilizes blood sugar, reduces fatigue and exhaustion and so much more.
Here is my recipe for a wonderful Stinging Nettle Soup.
Ingredients:
Pick two packed cups of fresh Stinging Nettle.
One onion chopped
two fresh bay leaves
1 tbsp olive oil and 1 tbsp butter
~slowly fry onion and bay leaves together in a pot until onion becomes transparent
add
4 cups water
2 large chopped potatoes
~cook until potatoes are soft
add
two cups packed stinging nettles
2 chopped garlic cloves
1 tsp of vegetable of chicken consomme
2 tsp dried oregano
1 tsp salt
~let cook 5 mins until the stinging nettles are soft
retrieve the bay leave and cool
blend the soup!
pour soup back into the pot and add
1 cup water (or more if soup is too thick)
hot sauce to taste
pepper and salt to taste
heat and serve!!
